The Perfectly Roasted Dinner

It was a crisp autumn evening, the kind that invites you to cozy up and enjoy a hearty meal. I had decided to prepare a roast dinner—a classic choice that seemed fitting for the season. The menu was simple but elegant: a perfectly roasted chicken with rosemary, garlic, and lemon, accompanied by crisp roasted vegetables and fluffy mashed potatoes.


The first step was to prep the chicken. I rubbed it generously with olive oil, salt, and pepper, then stuffed the cavity with fresh rosemary, lemon slices, and a few cloves of garlic. While the chicken roasted, I turned my attention to the vegetables. Carrots, potatoes, and parsnips were peeled and cut into hearty chunks.
